Buckeyes
Notes:
These are fun to make, you may want to use the chocolate bark instead of the chocolate chips.
Ingredients:
1/2 C. margarine
1 tsp. vanilla
1 to 1 1/2 lbs. confectioner’s sugar
1 C. peanut butter
12 oz. chocolate chips
1 oz. paraffin
Preparation:
Melt margarine until very soft, but not liquid. Mix with vanilla, sugar, and peanut butter until firm enough to form balls. Refrigerate 20 to 30 minutes. Melt chocolate chips and paraffin in top of double boiler. Dip balls in chocolate with toothpicks. Drain on waxedpaper. You put in refrigerator for a few minutes. Do not dip the balls entirely, you want some of the peanut butter to still show.
