Confetti Mac and Cheese

Confetti Mac and Cheese

Notes:
This is a colorful Macaroni and Cheese dish!
Ingredients:
8 oz. dry macaroni – uncooked
2 medium carrots peeled and diced very fine
1 small green bell pepper diced fine
1/2 C. finely chopped onions
1 small red bell pepper diced fine
1 C. milk
8 oz. Velvetta
1 C. sharp shredded cheese
Preparation:
Cook macaroni according to package directions. Place chopped carrots, peppers, and onions in a pot, and cook on a light boil for 10 minutes. When macaroni is done, drain, and place into a 2 quart casserole. Mix in the rest of the remaining ingredients reserving 1/2 cup of the sharp shredded cheese. Bake this for 15 minutes at 350 degrees. Add remaining cheese, and serve.
